In the end, one can live with Win 10 if you play around with the system a little bit - modifying for needs and comfort.
Such as: can I set up Microsoft Edge to appear configured like an IE 9 browser [which is still quite useful] yet not akin to a Chrome browser.
And yet still, today there aren't too many alternative OS options that aren't considered dodgy or have compatibility/configuration issues.
Perhaps Ubuntu?

I disable most MS programs and install the alternatives I like. I've don't use a MS browser, mail program, file explorer, or Office product.
I alternate between Win10 and 4 different linux flavors which I can select in my boot menu.
Ubuntu is one of them and is the one I'd recommend for a linux newbie.
IE is a piece of shit and Microsoft have been telling people to stop using it for years.
Edge is being replaced with the new Chromium-based browser which will accept Chrome extensions.

Those defender updates won't help you if you use IE to vist a site that exploits ADV200001
They won't prohibit you from receiving updates but they will not do any work on updates explicitly for Win7.
So your basic operating system will not receive updates after Jan 15 but you might get an update for a program which is still used in later Win versions and Microsoft Defender is such program.

I can turn on bluetooth, put it in tablet mode for use on touchscreen devices or switch on the vpn, wifi, or hotspot or project my screen to my tv or multiple displays or connect to my wireless headphones and the various other functions on there(which will be above the paygrade of some tarmactarded half Mick who needs help topping up his cars coolant) in one click.
The search function has been greatly improved too.
