    Bacon Wrapped Meatloaf

Simple and easy meal the kids enjoy. Normally served with mash and gravy, but we had had that with roast pork just two night before so the kids asked for chips.

Now normally I buy the thick cut frozen fries from a company out of Belgium, and they really come out nice. Thai potatoes have too much moisture for a crispy chip. But they were out and I had to go for the shoe string ones. Added some julienned long beans with onions and we had a meal.

    Right out of the oven.

    Carved

    And served

Its too easy and too old fashioned. Nothing high so or fusion about it.

    One pound of ground beef
    half pound of ground pork
Half an onion slice diced finely
5 or 6 big cloves of garlic diced as well
Red bell if you like, I had some left over
2 ounces of ketchup and barbecue sauce each
a slice of stale bread diced finely
    salt, pepper, oregano
    an egg.
Bacon for the wrap. This one took 7 nice slices.

Pile it all in a pot and mix it very very well with your hands. Yup its squishy and cold but this gets it all mixed well. Form into a loaf and bake. 170 covered lightly with aluminum foil for 30 minutes. then 160 for another half hour to 40 minutes. Let stand for 20 before carving. Check on the bacon browning as ovens vary in heat and where the heat comes from. When I make it I am using top and bottom electric heat.

If you like it very moist add more of the ketchup or barbecue sauce. I dont use milk water or stock as I like it very firm.

Looks appetizing AO. My mom made bacon wrapped meat loaf about 2 times a month when I was a kid growing up. It was always tasty. Haven’t had any of this fine family style dinner in around 15 years. Something to think about trying sometime soon.

direct copy of my moms. notice the use of two meats, and just ketchup and barbecue sauce. Comfort food. My kids have grown up on it. They are way taller than I was at their age so I guess its working. Food that goes well with milk is always a high priority. Next meal will be a little bit fancier. Fettuccine topped with garlic prawns.

    Thanks all.

I sometimes put twist on my meatloaf recipes. Sometimes I make it with salsa and taco seasoning with a touch of hot sauce mixed in.

Same Chi, but I had done the Mexican on Sunday night, it was too soon. A great meatloaf indeed.

The maid does the veggies. No nam pla or chili, but a light touch of oyster sauce, and some onions and garlic along with the long beans.

Nice effort again AO! Put that oven to work and make some biscuits. Seeing that would really be torture.

^Sorry Slap, don't speak Brit that well. WTF is a "saveloy"? Is that the condom looking thing full of red dye $2? Is it edible (I mean by British standards)? Or just for insertion after a wonderful dining experience?
