    My favorite spicy snack

    Potatoes and Chorizo, a match made in heaven.

    I don't know what this dish is called, its a blend of Indian and Mexican.
    First chop yr Spuds into small slivers, chop onions and some Garlic.
    Heat oil in Pan and fry up some Mustard seeds, I like things spicy so I use about a table spoon spoon full.



    Then add cumin, black pepper, salt and turmeric, and put some heat into that then add yr Potatoes & onion mix, give it a toss around over a high heat for 5 mins.



    Note to Mods, This (V) is NOT a scat photo.



    Then add your Chorizo sausage removed from the casing and chopped up.
    This particular one was one Black Gang & I knocked up and was as spicy and tasty as hell.
    In 5 Kgs of pork it had 40 Table spoons of Chilli powder plus a cup of ground Chilllis.
    When its near cooked, which is about 10 mins, just check for seasoning and add a bit more salt if deemed necessary.

    The finished goods, enough for a good sized meal and a reheat snack left over.
    Its too spicy for my wife whos had a lifetime of training on SomTam.

    Havn't tried it but I have the feeling a variation could be the addition if a pot of yogurt.

    You don't get out much do you Memock?
    Its a spicy Mexican sausage, you can just mix up some minced pork and Chilli powder, Oregano, salt and make your own. It doesn't need to be in sausage form.
    As for buying it, you won't find it anywhere near where you are, thats why I make my own.

    You cant just start a thread like this with tasty looking food just before I go shopping with no idea what to cook and then turn around and tell us that you cant buy the ingredients!!!

    Is there a sausage skinning machine that you can get for the home. We used to have an industrial sized one back at my dads butchers shop but I've never seen a small scale one.

    I know you said it doesnt matter about the skin but I like my sausages skinned.

    From your first photo thought you were gonna cook up my all time fav spanish dish of chorizo tortilla, you had all the ingredients except the eggs, Highly recommended, basically what you have there make into an omellate and even better still place it into a french baguette!! AMAZING!!

    Just found this on the net. Its more like what I'm after.



    Did anyone ever see one of these in Thailand? Doesnt have to be the same model.

    Spec:

    yea, Outside the local Makro there is a machinery shop, they got all sorts of meat grinders similar to that one, although most are bigger.

    ^no, I am talking about tortilla de Patatas Y Chorizo

    It is a Spanish omellate with a main base of fried potatoes and onions with slices of chorizo sausage.

    not a snack but all this talk about Chorizo makes me think of fabada asturiana, Local dish of the region of Spain where my mother is from.

    Ok, really easy snack for the lazy amongst us.

    1 pre made pizza base (or large pita bread or even halved baguette will do)

    Salsa (jar or homemade)

    Chillis (chopped to taste)

    Grated cheese

    cold cuts & veg (I buy presliced veg from Tesco salad bar when I'm really feeling lazy)

    Put salsa liberally on base. Add coldcuts (salami, pepperoni, ham) if using and veg of choice (onions, tomatoes, pepper, mushroom etc) Sprinkle with chopped chilli. Sprinkle over cheese. Put in oven for about 15 mins. You can add more spice with chilli powder/flakes after cooking, if needed.

    A nice variation is to use spag bol sauce instead of salsa, & then veggies, cheese & chilli.

    I got a dozen recipes and even one for Cuban Chorizo, but it has no chilis at all.

    Most in Mexico comes in bulk, but they do not make it with the real stuff no more, no matter Pork or Rez, it is made with assholes, eyelids, lips and esophagus. only diff is what animal they come from.
