    Shouldn't a traditional schnitzel preparation be to gently pound the raw portion [usually pork, but chix is ok] in a nearly paper thin consistency? And then coated and fried....

    Actually that's just one chicken breasts' worth.

    Main breast part and chicken tender bit.

    As it's pressed flat-ish it may seem like more.

    Pounding out the filets between two pieces of cling film is a good trick too.
