One good thing about the pork revival in the culinary world is that we are getting ever meatier cuts.

Gone are the days of tiny little pork chops, lean and with little flavour, to be replaced with giant chops on the bone.

You can find an excellent version at Perle Noire, a nine-month-old eatery in East Coast Road.

For those who need to know the provenance of their meat, its Yorkshire pork rack ($28.95), weighs 300g before cooking and comes from grain-fed, white female pigs from Australia.

Chef-owner Jonathan Tan cooks it simply – grilled and served over vegetables and with a sherry-prune sauce on the side.

Not that the pork needs saucing.

Expert cooking ensures that it remains moist and juicy inside, with a good sear on the outside.

The best part of ordering this dish is that you get to gnaw on the bone, teasing out every last bit of meat.

The chop tastes like the pork you ate when you were a child.

There is a mild but definite porkiness that was bred out of pigs in the fervour to make pork as healthy – and tasteless – as chicken breast.

Thank goodness food trends have changed.
