The chicken doesn’t salivate, diners do.

No banquet here is complete without this dish.

It looks hot, and it is.

You can choose from three levels of spiciness – mild, medium and whoa!.

Most people opt for mild and medium, these being sensible choices which allow them to taste the other ingredients, such as the aforementioned silky poached chicken, crunchy peanuts, celery, Chinese parsley and cooling mint.

There are other built-in cooling agents in the dish. Chilli cowards should eat a mouthful of cubed century egg to douse the fire on the tongue. Or slurp up some crunchy shirataki noodles, so soothing when the lips are burning.
