This 12-year-old restaurant was the first to introduce Sichuan mala (numbingly spicy) hotpot here.

Over the years, it has adapted to cater to local tastes and to compete with the budget hotpot restaurants that have sprouted recently.

From an average bill of about $40 per person when the restaurant opened in 1995, the hotpot is now a buffet priced at $27.90 per person. And the once fiery mala stock has become watered-down for those not used to the real thing.

But if you want the real thing, just let the waitress know. The spice level is easily increased with a scoop of dried chilli steeped in an oily brew of spices.

After we had the spice level of our stock increased twice, it was perfect with just the right kick to flavour the meats cooked in it.

The pot is divided into two sections, so besides mala stock, you can also have chicken stock which is nicely flavoured with soya beans.

Instead of having the ingredients laid out on a buffet table, you order what you want from a menu. The selection of meats and vegetables such as chicken, beef, mutton, cabbage and mushrooms are fresh and taste great mixed into a dip of sesame paste and slices of garlic and chilli.

What also makes this eatery stand out are the little snacks that are brought to the table throughout your meal. Ranging from cocktail sausages to xiao long bao to water chestnut jelly, they provide variety and a respite from the fiery hotpot.

There are also some a la carte dishes for which you pay extra. The sliced pork in spicy sauce ($4) I tried was good.
