Remember those dark days when nobody wanted to eat pork? What a difference a few years make. Now, it’s everywhere and restaurants are serving up the fattier cuts too.
Some do it with real finesse. Cherry Garden’s roast meats chef, Wilson Goie, is one of them. He makes a very fine Cantonese- style roast pork belly ($12).
It is hearty and refined at the same time. The gently blistered skin is thin, crisp and just salty enough, while the meat remains tender.
Dip the pieces into the accompanying mild mustard honey sauce if you want – it does help to cut the richness.
But isn’t richness the reason you ordered belly pork in the first place?
