Silk Road specialises in Chinese cuisines found along the famed trading route that linked China to the Western countries centuries ago.
The menu is thus a combination of dishes from Sichuan, Shaanxi, Liaoning and Beijing, some of which are not found in any other restaurants here.
The pork in spicy sauce on rack ($16) is one of them.
The dish looks really interesting, with the thinly sliced pieces of belly pork strung up on a bamboo rack like clothes hung out to dry.
You dip the pork in a thick and garlicky spicy sauce. It is then wrapped in a thin crepe with a slice of cucumber – just like a Peking duck.
The flavour, however, is very different from the duck’s.
The garlic in the sauce hits your palate with a robust punch that is softened only slightly by the bland cucumber and crepe.
But as you chew, the oils and juices from the pork emerge.
The combination with the sauce is a perfect match, as the latter cuts the fat even as it flavours it.
The result? A great-tasting dish that does not feel heavy at all.
