I used to think that the Italian ravioli was an inferior version to the Chinese wonton.
But that was probably because I had only tried poorly made ones where the pasta sheets used to wrap the stuffing were so thick that all you tasted was flour and little else.
The Piedmontese veal ravioli with truffles ($35) at Il Lido is nothing like that. Instead, the skin is thin and smooth, and the stuffing is delicately flavoured with just a whiff of truffle.
But it is the sauce that adds the perfect touch to the dish. Reduced from veal stock, it is so full of flavour that you want to savour it down to the very last drop.
