Hello Unregistered,

Meritus Mandarin Singapore, 333 Orchard Road, Tel: 6831-6262 Open: Noon to 2.30pm, 6.30 to 10.15pm

This restaurant has been serving traditional Peking duck since it opened in the 1970s.

The crispy skin of the duck is sliced off by the chef at the table and wrapped in a thin flour crepe or an egg crepe with a dash of sweet sauce.

It is a classic that has long been a signature dish here.

But recently, the restaurant came up with a unique spinach crepe that gives the dish a nice twist.

Tinged a light green, the crepe is very light and works well with the fatty skin. The mild spinach flavour cuts the oiliness, giving the dish a cleaner taste.

Not for the traditionalist, but if you want a variation of the normal Peking duck, try this.
