Practically every fine-dining Western restaurant puts pan-fried foie gras on its menu but it is Saint Pierre that most people think of when they are in the mood for the dish.

That’s not only because chef-owner Emmanuel Stroobant does the dish perfectly each time, with the sinfully rich liver oozing out from a crispy crust when you bite into it.

It is also because he comes up with interesting ways to dress the foie gras as well.

The dish you see in the picture is served with French toast and sauteed strawberries.

Or you may find it sandwiched as a burger between a bun with lots of salad greens.

One thing is for sure. Pan-fried foie gras may go out of style at other restaurants but you can always find it here.
