This dish is designed for the Singaporean palate.
The classic lobster pasta has been turned into half a Chinese dish by throwing in shallots, garlic, parsley, anchovies, onions, shitake and button mushrooms into the sauce. There are even slices of chilli padi for a bit of kick.
The sauce is then spiked with both brandy and champagne before a little cream is added to thicken it at the finish.
Freshly cooked spaghetti is then tossed in, soaking up all the flavours.
This is topped with half a live Maine lobster which is cooked to perfection. The meat is plump and juicy, and cut into bite-sized pieces for easy eating.
At just $39 a serving, it is one of the best lobster deals in town too.
