A salad is nothing to get excited about, usually. And a roast duck and fresh fruit salad is a standard served in many restaurants.

But Summer Palace’s elegant version of it is something else.

The refined Cantonese restaurant in The Regent Singapore hotel is renowned for its roasts meats. Its roast duck is delicious even when shredded and served in this cold dish, whose Chinese name translates as Lover’s Platter ($26).

What also comes across in the dish is the cleverness of it all.

This is served with no dressing, maybe to give full play to all the tastes and textures: soft roast duck meat with scrumptiously chewy skin; slightly stringy chicken; firm, sweet honeydew; mushy, sweeter mango; and, last but not least, crispy fritters.

At the end of your meal you may still be marvelling at the genius of the salad. Especially if you finish with the mango soup served in a coconut ($8++) and find that the mango bits you get are sour, perhaps to balance out the sweetness of the soup.

Ah, sweet mangoes for the salad and sour ones for dessert.

How lovely that the chefs take such painstaking care with everything at Summer Palace.
