Lion’s head meatballs, a Shanghainese classic, sends shudders down the spine of light eaters.

That is because a good lion’s head has to be made with fatty pork to get its melt-in-the-mouth texture and lovely flavour.

Add to that the sweet brown sauce that it is braised in, and you get a dish that really weighs heavily on the stomach. However, Grand Shanghai has come up with a lighter version called braised lion’s head meatballs with crab roe ($26).

The taste, however, is not compromised. That’s because the plump meatballs are still made of fatty pork. So while they are firm enough to hold their shape, they crumble easily in the mouth.

It is the sauce that lightens up the dish. Although crab roe is mentioned, there is actually very little of it. Instead, you find shreds of crab meat in a sauce with just a hint of starch.

And the claypot the two meatballs come in is lined with lots of lettuce leaves to give the dish a healthier balance.
