Its signature dishes like the Heng Hwa fried beehoon (from $4) have made the eatery so popular it now has more than 10 chefs from Putian whipping up excellent fare from the coastal city in China’s Fujian province.

The fine rice noodles are fried so well they are springy, making them a hit with regulars who like Heng Hwa cooking, which is characterised by light flavours.

What is special about the beehoon is that it is made from old rice milled by hand in Putian.

The slightly yellowish beehoon is so thin it resembles strands of hair, but surprisingly, it does not break easily when fried.

And unlike normal types of vermicelli, no soaking is required.

The flavour of the beehoon comes from the rich, milky stock of pork bones and old hens cooked for hours at high heat.

Apparently, 10 hens and 10kg of pork bones go into the making of 50kg of the stock.

The fried beehoon is served with prawns, lala clams, fried beancurd, mushroom, peanuts and crispy pieces of seaweed that also come from Putian, which is famous for its seafood.
