There is fried carrot cake that you find in hawker centres around the island.

And there is Taste Paradise’s fried carrot cake in XO sauce.

The keyword is XO. No, the sauce does not have cognac among its ingredients; XO stands for “extraordinary”, and this dish is certainly that.

The sauce is made with chilli and lots of dried scallops, which give the spice a delicious flavour of shellfish.

This, together with the bits of Chinese sausages tossed into the wok with square pieces of steamed carrot and some beansprouts, work up a tantalising aroma that hits you even before you dig into the dish.

Then, you put a piece into your mouth – and you’re in food heaven.

The carrot cake, which is made with sweet radish and not carrot, is so soft. And the beansprouts are so crunchy.

The $7 serving is not big though. It’s meant to be shared among three or four people as an appetiser, but I’d suggest you keep it to just two. Trust me, you’d even want to eat it all by yourself – except that you should leave room for the restaurant’s other wonderful dishes.
