You would not expect a seafood restaurant to come up with a kick-ass recipe for Dong Po pork but the version here is truly excellent.

The braised belly pork ($18) in this dish named after famed Song dynasty poet Su Dongpo comes in beautiful layers of fat and meat.

It keeps its shape but is so soft that it wobbles as you pick it up with your chopsticks. Then, in your mouth, it simply melts. And you revel in the wonderful sensations working your tastebuds overtime.

The amazing thing is that the pork does not even feel fat because of a slightly vinegary gravy that cuts the oil.

All you taste is the fragrance of fat and meat merged into a heavenly sensation.
