The food at this Cantonese restaurant seems to get finer each time I visit it.

If you have any doubt, just try the braised crab claw on wintermelon ($25). It’s an acid test for a good Cantonese chef.

The crab must not be overcooked or the meat will toughen up. The wintermelon, however, has to be braised long enough for it to get sweet and soft, but not so long that it gets mushy.

Then there is the superior stock, which takes hours of simmering to get the reduced flavours of chicken and ham.

Go wrong at any stage and the dish is totally spoilt.

That, happily, is not known to have happened here.
