Apparently, Sanur’s dishes are cooked in a master kitchen so that the quality is controlled and always consistent.
While that smacks of mass production, unlike the more homely image of a chef stirring the pot lovingly in his kitchen, its results can sometimes be very good.
An example is Sanur’s beef rendang ($7.95).
The meat is always just tender enough, having been simmered in the rich and spicy gravy to perfect timing.
The spices are tantalising, with the distinct fragrance of kaffir lime leaves giving it a wonderful aroma.
And while the flavours are strong, the rendang is not so chilli hot that it gets you panting for water. All you need is lots of steaming rice for a perfect match.
