From the way the claypot is bubbling, you’d think the crab was sitting in a pot of cheese fondue.

But there’s not a trace of cheese in Canton Wok’s baked crab with white cream sauce ($38 for one crab, $68 for two).

Instead, the creamy white sauce is made with butter and evaporated milk. This sounds cloying but it isn’t.

The sauce is just thick enough for dipping pieces of steamed mantou into, yet light enough to drink from a spoon.

Lest you think this is one of those bland white sauces, chef Ang Song Kang throws in a handful of fragrant whole curry leaves and some chilli padi slices to pep things up.

The result is a sauce with character and punch, but which doesn’t overwhelm the delicate flavour of the crab.

I wonder if the chef can be persuaded to serve pasta on the side. That sauce would be excellent with some fettucine.
