The Alaskan king crab is increasingly seen on restaurant menus here, but a lot of it is imported frozen.

Only a few local seafood restaurants bring it in live, and Long Beach is one of them.

The difference is that live crabs taste sweeter and have more succulent flesh. The best part are the legs which are packed tightly with flesh. The bigger the crab, the more meaty the legs are.

Long Beach brings in huge ones, some of which easily weigh more than 2kg. At $118 a kg, that works out to more than $200 but a crab can easily feed a table of 10.

You can have it served in several ways, such as chilled or steamed with chicken fat. But the best is to have it stir-fried with white pepper, which adds a tantalising zing without robbing it of its sweetness.

Incidentally, Long Beach’s Marina South branch is closing at the end of this month, and will reopen next month in Dempsey Road.
