Football once made Syed Mutalib, now 53, famous but the chef-owner of the House Of Briyani hopes that it is his Middle Eastern briyani that people will remember him for.

These days, the former national football player takes pride in whipping up pots of delicious Turkish, Afghanistan and Iranian briyani at the eatery at the junction of Kandahar Street and North Bridge Road.

And it is his take of Afghanistan briyani that many regulars go for.

He picked up his briyani skills from his chef friends when he visited them in Iran, Afghanistan and Turkey.

He adapted the best of the recipes and came up with his own version to suit Singaporeans’ palates.

The good quality bismati rice used for the Afghanistan version is so well cooked that the individual grains are perfectly formed. And best of all, it is not one bit oily.

Mutalib says the briyani sambal that he came up with is the perfect complement for the briyani that comes out of his kitchen.

The best way to eat it is to take a little of the sambal and put it on a bit of the rice, scoop a little of the dalcha (vegetable curry) on top, then top it again with more of the sambal and some chicken or mutton, and there you have it – the full flavour of the spice rice.

All three types of briyani cost $5.90 a plate, and the price is the same for both the chicken and mutton.

The fish version (also $5.90) is available only on Fridays.
