I’m sure it has some sort of name to it and that there are various different ingredients that can be added but this is the way I prepared it to my taste.
Approximately 8 tomatoes (I like using Italian plum tomatoes).
Approximately 1 cup of Extra Virgin Italian Olive Oil.
Approximately 2 table spoons of “Italian Seasoning” which contains Marjoram, Thyme, Rosemary, Savory, Sage, Oregano and Basil.
4 cloves of garlic.
½ purple skinned onion.
Course Ground Black Pepper to taste.
Garlic Salt to taste.
Italian Bread.
- Finely chop the tomatoes, garlic, and onions and place in a mixing bowl.
- Add Extra Virgin Olive Oil and “Italian Seasoning” to mixing bowl with chopped veggies and mix.
- Add Course Ground Black Pepper and Garlic Salt to taste.
- Let it set for about an hour. I like mine chilled so I let it set in the refrigerator.
- Slice the Italian Bread and warm in oven or microwave just prior to serving.
- Spoon the tomato concoction on the warm bread. (In our case at home, we just scoop the warm bread into the tomato mix and enjoy!

Actually Marmite, I didn't forget, growing up we just never ate it that way but I do have some mozzarella in the fridge and adding some mozzarella sounds inviting so tomorrow morning, That's what I'm gonna do. Have some Bruchetta with Mozzarella. Thanks for the advisement.
Pretty good mix for a faux bruschetta.
In the mountains out of Terni, in the village of Cesi, we'd toast our bread on the coals, then quickly rub/grate a clove of garlic into the hot toast, followed by a few bits of tomato, fresh from the garden.
A drizzle of our own olive oil and a twist of black pepper, a pinch of salt.
A glass of chilled Orvieto.
Heaven.
