    LT, What I am thinking as this project seems to be expanding is. How many members of staff do you plan on employing? It looks to me like you will need several cooks, including a head chef, several bartenders and a lot of waiters and waitresses.

    Exactly so most live music places open for dinner around 6ish. Bands start around 9 after folks have eaten and are ready to rock.

    The best venues with music I have been to have great music, good service and grub food when you get a little peckish.

    At first we intend to employ around 5 critical staff being a cook, cashier and 3 service ladies. I am going to invite a few ladies to join us to service the patrons that sit outside the bar on the outdoor balcony.

    All staff will receive a salary based upon their experience and have free accommodation with meals.

    I envisage if the place takes off it could be between 20 -30 staff but let time and results be the employer.

    Beforehand I have a jazz/ blues band lined up who play soft dinner music.

    I have spoken to the manager of the Hard Rock Asia and copied his entertainment format with his permission

    This is where things get difficult. Finding, training, and keeping good staff is really a chore. Throw in live music adds another level of managment.

    Not to mention the pool boy, lion tamer and paramedic!

    LT, back when I was alive and spent a lot of time in bars, for me it was all about the landlord and locals. Decent food and beer were a bonus but I used to pop into a local bar for the chat for a couple of hours after work most days. An easy atmosphere with a bit of banter are more important to me than a range of drinks and food.

    As for live music, unless it's in the background it's not for me but then I like an early evening drink and am tucked up in bed before the bands start up. I guess it's difficult to please everyone so you will have to use your space wisely so as not to exclude some clientele.

    Hi Mendy,

    I had an English mate turn up around 1.00pm and he was pissed already, and after a few more beers he said he wanted chilli con carne with rice and I gave him a plate in 10 minutes.

    He loved it and left soon after although his daughter wanted to stay with us as she was still swimming.

    Our food most days will basically be pub grub fast food and on the table within 10 minutes.

    Special meals can be prepared but based upon a pre-booked order!

    Who's going to manage/ oversee the whole thing? Every night. And not have a liver like a football in 12 months (a stereotype of bar owners, I know).
    And security for when the roided up aussie muay thai dickheads get a shit-faced and want to punch on with everyone.

    Good for you for having a go and I hope you make lots of $$$.
    For me bars are places you go to, too many of them around and they go hot & cold and the custom disappears.

    With bars and pubs imho people are attracted to the atmosphere and craic first.

    Everything else is secondary but if you can mix the two then you're on to a winner.

    You need to.be the Landlord/comedian /Agony Aunt and general all rounder.

    I would question your business model LT. Are you going to hire someone who's experienced in managing your enterprise. You and your wife don't seem to have the experience and without that experience, how can you possibly succeed? The amount of details in your endeavor are enormous...what kind of mugs to serve beer in, proper paper towels, cloth towels or a roll of toilet paper on the tables. Do you serve only your wife's food or source local suppliers, who's going to do the negotiations?

    If you're going big, you need to get big people involved. You don't get someone that's filled up a car at a gas station for years to work on a Lambo.

    Competition was fierce for the oil and gas jobs in the final year of my Chemical Engineering degree.

    One of my fellow alumni wrote 'Fuel Injection Specialist for Shell Oil' on his CV for his summer job between 3rd and 4th year - which was technically true as he was a petrol pump attendant.

    Thanks for your very good reply Topper.

    My wife learned how to cook Western Food in one of the first pubs selling such food in Bangkok. She was also the cashier and generally managed the daily evening shift to the complete satisfaction of the English owner. So she does have experience! I have absolutely no idea and if I was to manage the place it would fail miserably. We therefore are looking for a manager who will be offered 2 room air-con accommodation above the bar. Once we have finished off the place I will be contacting potential managers to have a look and maybe offer a lease agreement for them to take over the bar and run it as they want. My wife can still have the kitchen and outside shop and supply the bar food.

    And yes having all the little things, and as you have mentioned, is very important.

    ^ I would do so mate but things seem to moving forward as I have my wife's approval.

    When it comes to final painting, tiling and murals on the walls I will employ an interior decorator.

    I forgot to mention there is a Thai Garden Restaurant serving mainly Issarn food next to our property adjoining the rear parking area and the Klong.

    The owner is a retired High Ranking Pattaya policeman and we have spoken to him about the supply of Thai food and he has agreed. So no need to cook Thai meals as he is giving us his menu.

    the interior decorator is not the one who will be working the final building, is he? I meant a bar/resort manager may have ideas about layout, spacing, what facilities to build and what not to before you do it all!

    Most of the main structure in the bar area is finished so the basic layout is settled apart from painting and tiling.

    I have builders in working on the main house where the pool room will be with an adjoining bar and a covered seated barbeque area next to the tennis court.

    I am now concentrating on finishing the shop front which we plan to open first. Based upon its success or failure we will then finish off the main bar.

    At present I am looking at pool tables which come in 3 sizes being 7ft, 8ft or 9ft. If I could get some feedback regarding the best size it would be appreciated.
