I've stayed at a few guest houses there, the handiest one was on Harischandra road, leading down to the burning ghat of the same name.
There was a house next door where a few water buffalos were kept on the ground floor. They'd be herded down to the river after morning milking to be washed, then back up to their ground floor pen for a feed.
Buffalo milk and dahi (curd/yoghurt) for sale across the road, chai and chapatis just outside the g/house door, and a really good Muslim vegetarian restaurant on the corner, veg and fruit stalls along the main road.
,............ and monkeys, thieving little sh*ts!
They were everywhere, so I had great opportunities to sketch them, as I did several places around Varanasi.

I had no problems with food there, but I'm choosy about where I eat.
Avoiding pre-prepared street food is wise, eat only freshly cooked meals. Muslim restaurants are good value, so's the food at the Hare Krishna colony or at the Jain colony, all vegetarian,...or chew on freshly baked chapatis and alu dhum (potato curry) followed by fruit and more chai.
But, if staying at a hotel with a decent restaurant, where you can have really good meat curries, you've got a good chance of avoiding the running trots.
Take a quality camera. This is the venture of a lifetime. Do not buy film in bulk & buy from a reputable outlet. The heat is stifling.
Apart from the endless cremations at the ghats, Varanasi was once well known for its silk weaving.
I bought some last time there. One piece which I'd intended to have made into a suit ended up becoming my blanket,.. warm at night, yet cool enough to use during the day as a cloak.
Silk breathes easily, so moisture doesn't accumulate in the fibres as it can with cotton, and doesn't stink like synthetics do after a few hours wear in the heat.

I stayed there one night in 2007, did not see any cremations, drove up to a place north of there, Bhadohi I think it was called to check out a rug factory.
Looked like a very interesting place though. To this day whenever I smell the stench of pissed on carpets I am reminded of the hallways of the hotel we stayed in that night, it was disgusting.
A Pom I went trekking with in Nepal the same year told me they don't cremate the babies, they just float them out on the river. He went on a boat tour and saw a babie's body floating down the river with a crow pecking at it !
