    My homemade plum wine. The plums come from my wife's Thai friend who owns a fruit orchard northwest of town. So yeah, pretty much wine from scratch.

    Alcohol level is about 13% and it's in that sweet spot between sweet and dry. The plum taste really shines through.

    Do you measure it with a refractometer?

    And did you just add sugar and yeast or what was your process?

    I'll be making ginger beer soon, which is technically just ginger wine.

    Just juice, sugar, and yeast to make the wine. A half teaspoon of pectinase to clear it up after fermentation. Then decant into a bottle using a coffee filter. .

    I already finished off my Ribena wine. It was a weird one. It had a strange medicinal taste, but at the same time it was very more-ish.

    Sorry, no pix of the Ribena experiment.

    Half a teaspoon for a gallon?
    How long after adding the pectinase do you bottle it? I have some pectinase but haven't found the best way to make it effective yet.

    I wait until it does its magic and everything is not cloudy. Then I clean up the wine by pouring it through a coffee filter.

    I'm probably so far away from what experts and keen hobbyists do, but so far most of my homemade wine, not all mind, has been enjoyable to drink.

    I thought in the interests of science I should answer my own question. It's sort of okay, initial taste is standard cheap rum and cola with a slice of lemon, the aftertaste is a little bitter and cloying. Not joining my list of preferred cocktails. Maybe I could have tried the Pepsi neat but where's the fun in that?

    No poshness intended, I think that SangSom is closer to a rum and HongThong closer to a whisky. (Although, frankly, both are far from real spirits.) I have a bottle of each on the shelf, I only thought the SangSom was a more natural pairing with a cola. It wasn't. Or, to be fair, it wasn't more or less natural because the HongThong route is yet to be explored. More experimentation required.

    Well after a full boat physical passing with flying colors I embark on another year being med free.

    That said.......





    I decided to crack open a bottle I had been holding. This is probably one of the finest sipping Tequilas around.
