Lately I have had some time to devote to cooking some new things. I made this one the other day, it has a really nice spice to it from the pepperoni, paprika and capsicums. It comes from the cookbook "50 Perfect Pasta Dishes" by Maxine Clark. I'll post a photo later.
Serves 4
1 medium onion
1 red bell capsicum (pepper)
1 green bell capsicum (pepper)
2 tbsp olive oil plus a little to toss with the pasta
800g cannned chopped tomatoes
2 tbsp tomato paste (puree)
2 tsp paprika
175g pepperoni or chorizo
3 tbsp fresh chopped parsley
salt and pepper
4 cups pasta spirals (fusilli)
1. Chop the onion. Halve and seed the peppers, removing the cores, then cut the flesh into dice.
2. Slice the pepperoni or chorizo into circles.
3. If the sausage you are using is uncooked, slice it and cook it now with the onion. Heat the oil in a medium saucepan, add the onion and cook for 2 - 3 minutes until beginning to color.
4. Stir in the peppers, tomatoes, tomato paste and paprika, bring to the boil and simmer uncovered for 15 - 20 minutes until reduced and thickened.
5. Perpare your pasta per the packet directions, drain and toss with a little olive oil. Add in the sliced cooked sausage and parsley to the sauce, heat through, and season to taste.
