Today the wife mysteriously made up some salmon fish cakes for dinner and they go just great with baked beans.

Due to my current health regime I thought that more vegetables were necessary, so we had a cream of vegetable soup starter. This is a great way to fire some veggies down a kid, by stealth.

I love a simple piece of bread and cheese dunked in a nice soup.

    And the main course...

    Lovely!

I made up the vegetable soup this afternoon. I spent years wondering how to make soups but after consulting Google I've made two soups up in the last month.

Today was Thai vegetable soup. I'm big into utilising my kitchen time to maximum efficiency so I simultaneously made up a batch of Thai pickled eggs while making the soup.

I first put 18 bantam eggs on to boil. While waiting, no less than six different types of veggies were chopped up, while leaving a few garlic cloves and red onions un-chopped for the pickled eggs later.

The vegetables were fried in seasoned olive oil until soft.

While waiting for the veggies to soften up I cooled the hard boiled bantam eggs and started to shell them. I'd already sterilised the pickled egg jar and added a new brine/vinegar/garlic and onion concoction.

Unfortunately I was a bit vigorous with the egg shelling and had several casualties. The wife took over and shelled the remainder.

There still weren't enough eggs, so while boiling up a few extra I added chicken stock to the fried and softened vegetables and left to simmer.

    And eventually, job done.

    Into the blender...

And wazzed up with some 'cooking' cream.

And there we have it... delicious vegetable soup with a jar of pickled eggs!

Simultaneous cooking... two dishes for the time of one.

Sometimes less is more when it comes to soup imho fwiw.
Chicken, carrot, potatoes and celery is a firm fav at Chez Chitmiester all blended up to disguise the healthy ingredients naturally.
Served with some fresh crispy tiger bread....

Hmmm I feel a soup concoction coming on...oh wait the ex knackered the blender before she fooked of blending mince something or other.
    Shalom

Mendy's stove top needs a cleaning, but his kitchen in nowhere near as bad as Jeff's hellhole.

Also, both are loaded with sodium and sugars. Good way for an older person to get diabetes.

Without a doubt, even though he complains about the food constantly while aboard the ship.
