So I did BBQ chicken and corn on the cob today. A quick not for those of you who may say it is burnt. I do that on purpose as I like the skin crispy.
So the way I do it is sear the chicken on a very hot grill then I move it to the cooler part of the grill and add applewood chips to get a smokey flavor and then finish with BBQ sauce. The corn gets the silk removed I leave the husks on and grill it, finally it is brushed with melted butter.

Whipped out the Barbie on my small balcony.
made some bacon jam and home made burgers and fries.
1 pound bacon
1/2 cup brown sugar
1 brown onion
1/3 cup water
1/3 cup black coffee
1 teaspoon balsamic vinegar
Smoke bacon for a half hour or so in smoker (or fry 10 minutes in a pan)
Remove bacon, fry sliced onion in fat. 30 mins in smoker or 10 mins in advance pan.
add sugar and another 10-20 minutes while it caramelizes
then add water, coffee and balsamic vinegar
approx 30 mins while liquid reduces.

While walking through the morning market I came a cross some half way good tomatoes, a bit on the small side but workable, and since they were going to be baked they did not need to be the best quality. I can always find bell peppers but not good tomatoes
so decided to make stuffed tomatoes and peppers.
First you scoop out the tomato core and save it in a big bowl.
where you chop them up and mix it with , dill. 1 lb ground pork (beef really but I had pork) two tablespoons of chicken broth powder (Knor) salt an pepper to taste . one medium size onion chopped up fine, and two cups of rice. a bit of olive oil. a cup of water , to moisten the mix for the rice to cook. and a can of finely chopped tomato's. (don't be afraid to improvise)
Since you are going to end up with a lot more stuffing than you took out , the rest you use to stuff bell peppers (throw away the seeds)

Any remaining stuffing you can put around the tomatoes and peppers, or in a separate tray to cook as a side dish.
Cover the tomatoes and peppers with aluminum foil and cook at 380F for about an hr. (you can check at 45 min to see if the rice is cooked) . When the rice is cooked, remove foil and bake for another 15 min at 400F to caramelize the tomatoed and pepper tops. Keep an eye on it that you don't burn them (time may vary depending on your oven)
A few potatoes wedges between the tomatoes and peppers work out well, but I did not have any.
A nice project for a rainy day here in Khon kaen. (sounds like a lot more work that it really is)
