It's very rare that I need any prompting to have peas these days... but here we are...

I've got the sausages, so this week will be a homemade toad in the hole with mash, peas and gravy.

Another week with with a purpose!
There's an idea here for a Thai fusion toad in the hole with hot dogs from the 7 and one of those stinky Isaan sauces instead of the gravy.

Ere you go, Chitty. Job for you.

Hang on a minute. Just cos you lot in the Black Country enjoy getting a bit too close to your sisters, don't tar the rest of us with the same brush.

Well you're on the right track, a kids meal, maybe not a McDonald's kids meal.
    Are potatoes scarce around there?

    Oh, fair enough.

It was plenty big enough for me. And with sweet potato and a pumpkin salad on the side there was certainly enough carbs.

Hate fake Thai Green curries in the UK served with peas, green beans and even broccoli. I understand why the Thai restaurants do this as its cheaper and their customers dont know the difference.

    Thai Eggplant only please...

^ I'd need 4 or 5 pints in me, then it would be lush.

He's certainly got his money's worth out of that Christmas present.

Apparently he asked for something 'Stylish and Italian, on two wheels'.

So I did BBQ chicken and corn on the cob today. A quick not for those of you who may say it is burnt. I do that on purpose as I like the skin crispy.

So the way I do it is sear the chicken on a very hot grill then I move it to the cooler part of the grill and add applewood chips to get a smokey flavor and then finish with BBQ sauce. The corn gets the silk removed I leave the husks on and grill it, finally it is brushed with melted butter.

Delivered by the Mexican place around the corner...

Beef tacos with a fried shell...1 order for me and 1 for my wife

    Dinner-beef-tacos-jpg

Pork Tacos - We only got one order of them...

    Dinner-tacos-pork-jpg

It was a first time trying the place, it won't be the last. Total cost was ~600P or about 400B. Easily as good as La Monita.

Edith is doing up her patented tom yam gung, so this is technically the starter.

The bonus of a home gym is you take out your steak before anything else. Then get going.

    NZ tenderloin.

Before the last set, salt, pepper and olive oil it. Into the redhot skillet for a minute per side.

Let it rest while you do the last set. Finish and you have yer perfect starter.

    Melt in the mouth.

    Have had worse starters.

Got one more in the fridge, which I fear will not see the light of day.

About to crack open a frosty one, so this advice probably goes just as well for beer drinking as it does for upperbody gym work.

Please do tell how you made that. There is a famous food truck here in Seattle that pretty much started that trend. Skillet street food.

    1 pound bacon
    1/2 cup brown sugar
    1 brown onion
    1/3 cup water
    1/3 cup black coffee
    1 teaspoon balsamic vinegar

Smoke bacon for a half hour or so in smoker (or fry 10 minutes in a pan)
Remove bacon, fry sliced onion in fat. 30 mins in smoker or 10 mins in advance pan.
add sugar and another 10-20 minutes while it caramelizes
then add water, coffee and balsamic vinegar
approx 30 mins while liquid reduces.

Amazing you get away with that in an apartment tower. That type of shit is illegal here in a high-rise unless you are on the roof.

Tbf, it’s not allowed here either, I think. But there are very few neighbors around as everyone left during COVID.

Be careful mate with all that. My grill was hotter than a foundry when I went out to the backyard, but that is the way I like it to get a good burn on that thick chicken skin.

For Mendip: I mentioned somewhere here about getting a pic of the fresh lamb section of Big C Extra on the next visit, here it is.

    Dinner-20210613_102202-jpg

And the new-ish dry aged section. Not a big fan of dry aged meats to be honest, just find the flavours to be too strong in a lot of it.

While walking through the morning market I came a cross some half way good tomatoes, a bit on the small side but workable, and since they were going to be baked they did not need to be the best quality. I can always find bell peppers but not good tomatoes
    Dinner-tomatoes-raw-jpg
so decided to make stuffed tomatoes and peppers.
First you scoop out the tomato core and save it in a big bowl.
    Dinner-tomatoe-spoon-jpg
where you chop them up and mix it with , dill. 1 lb ground pork (beef really but I had pork) two tablespoons of chicken broth powder (Knor) salt an pepper to taste . one medium size onion chopped up fine, and two cups of rice. a bit of olive oil. a cup of water , to moisten the mix for the rice to cook. and a can of finely chopped tomato's. (don't be afraid to improvise)
Since you are going to end up with a lot more stuffing than you took out , the rest you use to stuff bell peppers (throw away the seeds)
This is what you end up
    Dinner-yemista-jpg
Any remaining stuffing you can put around the tomatoes and peppers, or in a separate tray to cook as a side dish.
Cover the tomatoes and peppers with aluminum foil and cook at 380F for about an hr. (you can check at 45 min to see if the rice is cooked) . When the rice is cooked, remove foil and bake for another 15 min at 400F to caramelize the tomatoed and pepper tops. Keep an eye on it that you don't burn them (time may vary depending on your oven)
A few potatoes wedges between the tomatoes and peppers work out well, but I did not have any.
A nice project for a rainy day here in Khon kaen. (sounds like a lot more work that it really is)
    Dinner-tomatoes-stuffed-jpg
The sooner you fall behind, the more time you have to catch up.
