    145-150 f internal temperature and then let it stand for a few minutes. Some people don't realize (a mistake that I have also made) that if you stop cooking it when it is medium well (160F) it will continue cooking from residual heat and by the time you eat it, it will be dry and well done.
    on a different subject
    The wife has ruined Thai restaurants for me, her cooking is so much better, every time I go to one, I am disappointed.
    Yesterday Pad Thai with crushed peanuts , tofu and a sprinkle of lime.
