That looks really good, Nampik! What kind of spice did you put on it?
Nothing like a chang.. hehe.. I miss those days of drinking Chang in Thailand. Cheers!

A very quick and easy fix to a tasty side-dish. Fancy, designer mac and cheese often costs forty or fifty dollars to prepare when you have so many exotic and expensive cheeses, but they aren't always the best tasting. This recipe is cheap and tasty.

    Recipe Summary

    Prep:
    10 mins

    Cook:
    20 mins

    Total:
    30 mins

    Servings: 4

    Ingredient Checklist

    • 1 (8 ounce) box elbow macaroni
    • ¼ cup butter
    • ¼ cup all-purpose flour
    • ½ teaspoon salt
    • 1 pinch ground black pepper to taste
    • 2 cups milk
    • 2 cups shredded Cheddar cheese

    Directions

    Instructions Checklist
    • Step 1 Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain.
    • Step 2 Melt butter in a saucepan over medium heat; stir in flour, salt, and pepper until smooth, about 5 minutes. Slowly pour milk into butter-flour mixture while continuously stirring until mixture is smooth and bubbling, about 5 minutes. Add Cheddar cheese to milk mixture and stir until cheese is melted, 2 to 4 minutes.
    • Step 3 Fold macaroni into cheese sauce until coated.

That worked out quite well. I followed the recipe initially then added a tin of drained tuna, placed into ovenproof dishes, added a little extra cheese on the top and stuck it in the preheated airfryer for 3 minutes, to give it a little extra colour. Served with a side salad.

No parsely hereabouts, so pepper to garnish it.
I have been looking for parsely and am reliably informed that the King's Project shop in Udon Central sometimes has it. A 110km round trip so I'll need a bigger excuse than parsely.
Sorry about the photo, I had to crop it or I cannot upload it. Then every time I double-click on the photo that control window flashes open - then closed again. So I cannot adjust the size.
Anyone planning to try this should note that Step 2 requires some very diligent stirring for over ten minutes. It's quite a workout and it is important to pour the wine and have it close to hand before starting.
    Thanks TC.

The macaroni cheese was too much for two of us to finish, although we made a good effort. It might appear again in the lunch thread.

Cooked a nice meal for the wife and I. Simple oven roasted chicken breasts. Also roasted up some spuds and onions. A big green salad with croutons, along with a bowl of gravy. Enjoyed by both of us.

Back from road travels. Wife hit the Moo Baan vegetable truck vendor and replenished our veggie and fruit stash.

This evenings repast of Salmon, frozen Norwegian stock, with sautéed sprouts served over a bed of jasmine rice. Side dish of chicken and radish soup. All correctly spiced and a most enjoyable filing meal.
