    ^^A good crop of heifers.

I had plenty of Holstein 'steak' growing up. Too bad they're better suited for dairy purposes.

I still think what the animal is fed on, how its cared for and how its butchered and hung play a more important role in the final steak than the breed - ooohhh and how its cooked.

From observations, I could guess that most don't take these qualities into account.

As in: they wouldn't recognize decent beef if it came up and introduced itself.

    re: Hormones

It's the corporate agri-business way here. Progress...so they say. Not the way it was done on the family farms of yesteryear.

    Very observant!
Does appear to be lamb mince.

It was actually a 50/50 mix of beef and pork with a 10% fat content.

Would have been very nice in one of your pies.

My missus is using off-cut strips of Ribeye steak and Tenderloin mince beef in her pies at the moment with a great response from her customers.

    Quite engaging, Ant.
Appears that a lot of work and thought went into this preparation.

    Looks nice from here.
    Well done.

Tried the first of my pre-made / frozen Paleo Robbie meals. This was the Marinated Chicken with Creamy Mash:

Presentation is a little off though that's not surprising from frozen and it wasn't as tasty as I had hope but very substantial meal. No going hungry after that one.

That was a mix of cheese, garlic, and chili sauce.

Usually I do them with bacon and sweet chili and creme fraich.
