    ^ Well I was 5 in 1972... and now I know where me Gran's missing mustard coloured tray went!

    Tonight was roast chicken.

    I lived at home until I was 18, and I reckon my mum did a roast dinner every Sunday lunchtime without missing a single one while I and my sisters were at home... and on until me Dad passed on. In contrast, I'm lucky if me bladdy wife is even here on a Sunday (or unlucky... depending on how you look at it).

    So anyway, who needs a wife when you've got cooking skills like mine!



    No stuffing sadly... but not the end of the world.





    Not a crinkle cut vegetable to be seen!



    It's late now in Korat, and my lovely young daughter is lying next to me... on the eve of her 9th Birthday. How can you not reminisce...

    Nine years ago, exactly, I was in Aberdeen, NE Scotland, for a crew change for four weeks on a survey vessel. For anyone who knows Aberdeen, I was staying in a shitty hotel on Market Street, just near the docks.

    It had been all planned out, the daughter was due in 6 weeks time, so I went off for my 4 week rotation, due back in Korat for my four weeks leave, 2 weeks before she was due.

    Anyway, I fly in from BKK, get to Aberdeen lunchtime on the Tuesday, catch up with a few guys, have a few drinks and off to bed for the Wednesday crew change. About 5am the missus calls to say she's feeling weird and maybe the baby's coming... I mean WTF... I'm the other side of the world in Aberdeen and she could have done this in the 4 weeks I'd just been at home... so, what can I say...

    She calls an hour later and says she's about to have an emergency C-section, and the phone may be cut off as she's just being wheeled into a lift.. yes, she was on a gurney... my daughter had decided to come 6 weeks early.

    The phone goes dead. For the next few hours...

    All was OK, I was working for a great company and they flew me straight back to Thailand. I met my daughter on the Thursday evening, a day after she was born. I'd ended up having a day trip to Aberdeen

    Nine years ago... can't believe it!

    I missed the birth of my youngest daughter by going out on the lash around Bangkok. The wife still mentions it

    Hope you spoil her rotten and she has a wonderful birthday tomorrow

    Very nice. I do roast chicken but I do not cook the chicken at home anymore. The local warehouse club Costco does a bang up roast chicken for $4.99 which is cheaper than I can buy an uncooked bird for.     Then I pull all the good meat off the chicken carcass and set it aside. I then throw the carcass into a pot with an onion, celery, and some carrots if I have them and simmer for about an hour and a half. Then I use that stock to make chicken soup. Nothing goes to waste.

    And as for my new cast iron skillet... I'm still just looking at it for now.

    Pre-seasoned?

    Be aware it will take longer to heat than a normal pan. And longer to cool down.

    Food will stick a little, so you need to actually wait till the pan releases the food to let it turn...

    M'Sahib enjoyed the kipper quiche that I made for her a few days ago, so came up with a request for a spinach quiche. This one quite 'rich', with grated Gruyere cheese and whipping cream instead of milk.

    Would have loved to have met up with him for a tour of the nightlife in Bangas or Patts or both before he settled down. Ideally, with a pocket full of phun tickets, assorted pharmaceuticals that were seemingly designed for partying in Thailand, and no set plans for the next 2 or 3 days
