    Simple Macaroni and Cheese

A very quick and easy fix to a tasty side-dish. Fancy, designer mac and cheese often costs forty or fifty dollars to prepare when you have so many exotic and expensive cheeses, but they aren't always the best tasting. This recipe is cheap and tasty.

    Recipe Summary

    Prep:
    10 mins

    Cook:
    20 mins

    Total:
    30 mins

    Servings: 4

    Ingredient Checklist

    • 1 (8 ounce) box elbow macaroni
    • ¼ cup butter
    • ¼ cup all-purpose flour
    • ½ teaspoon salt
    • 1 pinch ground black pepper to taste
    • 2 cups milk
    • 2 cups shredded Cheddar cheese

    Directions

    Instructions Checklist
    • Step 1 Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain.
    • Step 2 Melt butter in a saucepan over medium heat; stir in flour, salt, and pepper until smooth, about 5 minutes. Slowly pour milk into butter-flour mixture while continuously stirring until mixture is smooth and bubbling, about 5 minutes. Add Cheddar cheese to milk mixture and stir until cheese is melted, 2 to 4 minutes.
    • Step 3 Fold macaroni into cheese sauce until coated.

Yes, that is a nice simple one. The cracked black is very important I would think.

No you can't. In regard to why American cheese looks orange/yellow...

I buy a lot of imported British and Irish cheese but it gets expensive, so I still need to buy American orange colored cheddar from time to time.

That is because you are not American. That mac and cheese is something we grow up with and if you take issue with the BBQ chicken then we have a problem.

Don't get me started on English "cuisine".

At least I am on record as saying it is something I only eat twice a year.

Well nobody has to really, do they?

But whenever you post up something with less nutritional value than the packaging it came in it's a winner because it's a timeless American classic

Well, for me it was "macaroni cheese", and yes, a staple when I was growing up (home made of course). I have been thinking of giving it a go soon, even orderd some macaroni.

Not so many vegetables, that's for sure... but plenty of fruit (or so she tells me).

Chicken and rice, fish and rice, omelette and rice... with a smattering of Western dishes.

Re Armstrong's comment, I was thinking the same.

In our home, while the Boys are young ...
Chicken and rice, omelette and rice... with a smattering of Western dishes, chicken nuggets and chips being the #1 request.

mendip ... where will this memory lane of food come from?

And my personal favourite ... the O2

Mini Mendip is definitely going to miss her daddy.

Lamb stuffed with Rosemary and garlic then wrapped in foil to cook in it's own juices slowly, just gone into the oven..
