    I'm eating Keto (hence a lack of pics besides things like bacon and eggs of late ) and while there's lots of meat and some veg involved, there's all sorts of other things on the menu too. Couldn't be arsed doing a thread or talking about Keto except to say I'm losing 1 to 1.5 kg a week, enjoy the food, and feel good!. Here's tonight's dinner, roasted chook/pumpkin with coconut cream spinach and gravy. Some Greek yogurt with a few squares of melted dark chocolate stirred into it for desert, I really do like this sort of thing!.

    ^ I love spinach. We get the bags of frozen spinach balls from Makro which I boil with garlic and a dash of vinegar. Do you know if frozen spinach loses any of the goodness?

    Yesterday I popped into 'Korat Chef' in town, and picked up a few steak and kidney pies and a load of pork sausages.

    Last night it was steak and kidney pie, mash and peas (I love frozen peas as well).

    Tonight the littlun wants bangers, mash and beans. I'm really chuffed that she's developing a taste for good British fare!

    None whatsoever, I buy frozen too. Veggies start to lose their goodness the moment they're picked so frozen can be better than fresh in a lot of cases because it's been frozen within a short period of being picked, versus having been out of the ground for who knows how long. I learned this from a Nutritionist many years ago, and not many dispute her theory.

    If you like coconut milk, try this simple method for spinach prep some time:
    Simmer spinach till tender.
    Set aside in a colander to drain.
    Saute some onions.
    Add spinach.
    Add coconut milk (which the spinach will absorb).
    Add S&P and chili powder/flakes (optional, but it works well!).

    Even the Thai Missus really enjoys this!.

    ^ Thanks, I'll definitely try this. Without the chili flakes the daughter will probably give it a try as well.

    It's a constant battle to get her to try new veggies, and she's getting a bit bored of peas!

    Aussie ribeye.



    Ground black pepper and sprinkle of seasalt.

    Into the pan with onions, champignon and crushed garlic.

    Ribeye out to rest.

    Then big glug of red wine, chunk of butter and generous pinch of thyme into the pan.



    Turn off the heat



    Then add the juices from the resting plate.


    Chuck it over the steak.



    And yer done.






    Yeah, I've decided that I'm gonna have that for lunch pretty much everyday now.

    Just come back from walking the mut and hit by a ravenous hunger .

    There wasn't much but I found a braising steak and battered it with a rolling pin to tenderise it then chucked it in the pan for a few minutes with pepper and oil .

    Was gonna smother it in baked beans but spotted a few baby potatoes lurking at the bottom of the fridge.
    Skins left on and chopped into chips then into the oil.
    Swerving the can of baked beans for a second time I salvaged a salad and hey presto...

    A pizza on the sofa kinda evening

    While it wasn't the best in the city, there was no way I was walking in the smoke and sub zero freeze for pizza. The pizza shop in on the ground floor of my apartment building
