Damn! I forgot to take a picture of the beef stew I made last night. Went down great with 3 slices of oven fresh bloomer.

Yes and it looks like Dillinger put more effort into buttering his own bread, and got himself a nice glass of orange.

For the missus, a half-hearted buttering attempt and any old mug for the juice.

    Ingredients.
300 g minced beef or lamb
    basil
    1/2 kg of tomatoes
    1/2 onion
    3 cloves of garlic
    butter/oil
    1 cup of mushrooms
    1 medium carrot
    3 medium eggplants
    Chilli (optional)
    1 cup of White wine

    Topping
    1 cup of breadcrumbs
1/2 cup of grated cheddar cheese

    Sauce
    1 cup of flour
    2 table spoons of butter
    2 cups of milk
    nutmeg

    salt & pepper

    Method
Pre-cooking 1: Slice the eggplant, score and cover in salt and leave for 20 minutes
Pre-cooking 2: Pat eggplant slices dry and gently fry both sides in olive oil

In the meantime cook the mince and tomato sauce as you would a pasta/bolognese.
    ie
1 Dice the onion and garlic, brown in a pan with a tablespoon of butter.
    2. Dice the tomatos and add to the pan - add several generous spoons of olive oil and cook for 20-40 minutes.
    3. Brown the mince and add.
    4. Brown the mushrooms and add.
    5. grate a small or medium carrot into the mix
    6. add a cup of white wine.

    Sauce
    Melt 3 tablespoons of butter
add 1 cup of flour and mix well.
slowly add milk and mix at the same time.
add a pinch of the nutmeg.

Layer the moussaka, pasta, meat, cheese and then breadcrumbs, parmesan and grated cheese on top.

    Eggplant.

    If I used potato it'd be a Shepard's pie.

    Here's a slice.

^^ I probably should've made a salad or side to go with it...

    Didn't bother.

Tastes great, and enough for lunch today (well, ok, elevenses) also.

I'm having turkey for my Sunday lunch. I bought two gigantic fresh turkey legs for £ 3 in Morrison's, silly price and only three trays were available for sale, all snapped up immediately. If I remember, I'll take some pics.

That looks tasty Nige, I cooked some Mexican food up tonight but can't post pics as I'm using my phone. I have a few photo threads to put up too when I get my laptop sorted.

I've got a full week of roasts at various locations to look forward to when I first arrive. Becoming obscenely large is on the cards..

Went to the Dr on Thursday for a checkup after my operation and whilst he was very pleased with my progress he does want me to put on a bit more weight. I had only put on 1/2 Kg in the last month and he wanted more.

So, it seemed like a good time to do a bit of a fridge clear out with a simple dinner.

a trio of Cumberland sausages and what Tesco Lotus laughingly call bacon.

    Basic ingredients

Simple dice to make sure they cook evenly.

No need to use any fat as the bacon and sausage will take care of that.

    Need to keep hydrated.

    Already to go...

    In the goes the chilli

Once everything has cooked through and the veg is softened in goes the tomato sauce and the part cooked pasta along with a little of the cooking water.

A couple of minutes later.... plate time

Sloppy presentation I know... must do better.
