We might have eggs tonight but being such busy people we'll have to cook 'em quick. I found this useful video which I'd like to share with you all;
The wife had friends over from her university days. They asked me to prepare Mexican a few days before so.. Chicken and cheese enchiladas, a pork chili with beans, and salsa with chips.
Fixings for the chili, peppers both spicy and mild, onions the spice mix with added masa to thicken and the meat both ground and butt of pork.
Then the fixings for the enchiladas.
Salsa which you should always make first. You can then snack while you cook.
Enchiladas ready for the oven
and out of the oven
A bowl of finished chili
Ready to eat. But cant get it all in the frame.

Depends on how you do it za. But the beans have to be soaked overnight then cooked for an hour. I guess 2-3 hour simmer on the chili. The salsa is just like making a nam prick in reality. I had a pound of ground lamb in the freezer, I thought I'd do moussaka but couldn't find any good eggplants....
Then my next idea was to do a good shepherd's pie, but couldn't easily obtain any dark beer. My thought was to substitute dark beer Lao for Guinness.
Plan C was to use the middle eastern type spice mix and make a shepherd's pie with that....but the wife wanted to eat the meal with rice and after spending time in the kitchen that's just short of hellishly hot, we decided to make to go with the moussaka flavors, but serve it with rice.
Slicing and dicing....
The lamb with a bit of cumin, nutmeg, cinnamon, salt and pepper, tomato paste, red wine (in true middle eastern tradition).
I added a cup of mushroom bullion and now we're waiting for it to reduce...
