    About 10 years ago I did a thread on meatloaf. Of course it was the one time the kids asked for fries instead of mash. One thing that goes nice with meatloaf and keeps it moist is bacon. My meatloaf is half pork half beef, plus onions, garlic and bell with the breadcrumbs and some egg to bind it all. Just a couple of shots. I remember SK asking for the complete recipe.

    I'd say meatloaf is one of those dishes with so many good ways to make it that there's no 1 recipe that has to be even loosely stuck to! Had a friend in the Philippines of Polish descent that use to make the best one I've tasted, always served with nothing more than mash and gravy. Should've gotten his recipe before he passed away

    I wanted to make Shepherd's Pie for dinner yesterday but took out the pack of minced beef from the freezer by mistake, instead of the minced lamb (incidentally, the Makros in Korat don't stock minced lamb but you can get it at Korat Chef, along with Thatcher's Cider).

    So, Cottage Pie it was!



    I added chopped up carrots, courgettes and of course a handful of peas with the mince while cooking. I made extra which I bagged up and froze... for a lasagne or spag bol at a later date.



    Nice and sloppy... lovely!

    very nice. incidentally use less sauce and it will hold it's shape better.

    My thoughts exactly. Sometimes the visual aspect of a dish is not important.

    Exactly, and a serving of cottage pie is never going to look great plated unless the mince has the consistency of concrete to keep everything upright and in a rectangular shape. It's all about the taste, and I bet Mendip's was delicious.
