^ I'll have to check that one out the next time we're in Chiang Mai. No, she used to be part owner of a small restaurant in Bangkok, but her co-owners engaged in creative accounting, so she just cooks for me now.

Oh shit, yeah, deleted
No idea why, but I bought Duck breasts yesterday and it seemed a good idea to cook them this morning to put on top of garlic fried rice. Had to go to YouTube to learn how to cook them, never done it before.
Over cooked by about 2 or 3 mins of oven time, will know better next time.
^Skinless I would imagine?. Couldn't believe how much fat rendered out of them in a skillet, that fat would be staying put in a poaching pan (I think).
But isn't that 'healthy fat''?
Or maybe I'm thinking of 'tasty fat'!
Looks like Prags rat.
^^Number 4 being the key to that recipe.
edit: #1 should have been choke chicken.
Duck breast salted. Skin side down in a cold pan. No real need to score but if you do, small and regular rather than the stroppy teenager self harmers arm look as seen above. Turn the heat on medium/ hot and don't move the bastard until you see the cooked part stretching up to the top. Turn over, and then cook some on the flesh side. Finally into a pre heated oven for 6 minutes (180 fan) and rest for 10 minutes. You have perfect pink duck breast. Enjoy.
8km with 4 sets of Ab crunches and stretchy/hangy things every 2km.
Then some fookin' midday breakfast calories.
Ayam-tastico.
