You have to keep stirring it or else it sticks, as I added evaporated milk to it, as well as vanilla essence and lots of sugar.
When it was almost done I added the egg and transferred to a shallow dish, where a skin formed on top. Was well popular though....ate the last of it after my pasta this evening.

It's a great way to make use of left over rice.
Yumsy, do you put a vanilla pod in too? Or is that too posh?
Here's my recipe for rice pudding, using left-over rice. Sorry, no pics.
1 ½ cups jasmine rice (Cooked)Coconut Rice Pudding
2 cups coconut milk
1/3rd cup sugar
¼ tsp salt
1 beaten egg
½ tsp vanilla extract
1 tbsp butter
Put rice into a saucepan. Add 1 ½ cups of milk.
Add sugar and salt. Stir for 10-15 mins on a medium heat, until it starts to thicken.
Slowly add the beaten egg, and stir.
Add remaining 1/2 cup of milk. Stir for another 2 mins.
Take off the heat and add vanilla and butter. Stir until butter melts. Then serve.
If you want to add raisins, do it when you add the final 1/2 cup of milk.

I was going to start a new thread but found this old one to revive.
My mum used to put a big dollop of rasberry or strawberry jam in the middle, so you could swirl it around. And make it pretty. Or perhaps make it edible.
