    I think if you get wholemeal, then there should not be a problem, but I don't think normal white flour would have the body etc

    Fairly easy to get Aust hi gluten flour, Tops here in Udon has it.
    My experience is that if you use a preferment almost any bread flour will respond with a respectable loaf.

    I mentioned earlier I would try the cool water. Two loaves of Rye (w carraway) were kick ass.

    Water was not COLD but cool. Will continue the practice.

    You should aim for a finished dough temperature of 25 DEg, to achieve this I use ice water and cool the flour, because I get a temperature rise when mixing of about 4 deg. That temperature gives a good balance between optimum yeast development and enzyme activity for flavour development.

    If it tastes as good as it looks, I want some!

    I have a feeling that the ice/cooling debate etc has more to do with the tropical climate versus the temperate zones where many of us come from

    I am back in London at the moment and my yeast loves a cosy place

    yes, 25C sounds a good temperature for yeast

    21C is better (well, it is for beer anyway).

    I will have to buy a bread machine, they look bloody fantastic!... much healthier than processed white bread...

    Speaking of bread, if I had a dollar for every time a Thai had remarked that bread is all Farang ate, I'd be a millionaire lol... Farang gin dae kanom bung....

    I used to use one in England but I've never bothered in Thailand. I do make my own flatbread through, which is extremely easy.

    Don't bother with machine. Doing with your hands is much better.
