    Wayne’s Thai Beer Snacks: Spring Rolls

    One of the goods things about Thailand is that the beer snacks are bloody good for you. This is the first in my series of how to knock up a nutritious beer snack in Thailand for 50-60 baht (or about $2). Wayne Kerr’s Fried Spring Rolls.

    Thai Spring Roll Ingredients


    ^ 200 grams of minced pork (20 baht), a shredded cabbage (5 baht), handful of glass noodles (10 baht), a dozen sheets of spring roll pastry (20 baht), bit of salt, pepper and soi sauce (say 5 baht)

    Preparing Thai Spring Rolls


    ^Mix the pork, cabbage, glass noodles up with a dash of salt, pepper and soi sauce to taste


    ^ Lay a bit of the mixture down on one of the bits of pastry and roll up so they look like the suckers below

    Cooking Thai Spring Rolls


    ^ Heat up a bottle of oil in a good size saucepan and bung the spring rolls in


    ^ A production line set up like this is the go

    They'll sink to bottom at first. When they float to the surface you'll know they are just about ready .

    Eating Thai Spring Rolls


    ^ A beer snack needs beer of course. Sweet chilli sauce to eat them with is good too

    Shouldn’t take more than 30 minutes to knock up and eat. Can substitute the pig with shrimp, chicken, or whatever tickles your fancy. Enjoy!

    My wife makes these and they are excellent!!!! I love the sweet chile sauce with everything.

    Looks great, but you definitely need some bean shoots and maybe a few of those tiny shrimps.

    They look good, I normally add a bit of fish sauce, soy sauce and coriander root to the mixture for added spice.

    For a dipping sauce for spring rolls, I prefer a 50-50 mix of a good soy sauce and apple cider vinegar....kind of like the dipping sauce for gyoza.

    Good one wayne.

    My wife got a reputation for her awesome spring rolls back in Australia. Whenever we got invited to dinner we were always asked to bring spring rolls with us.

    She makes them really fat because she puts a big juicy prawn in with each one.

    So tell us more about this restaurant.

    We only have American fast food or the like. And pre packaged meals that taste of chemical!

    The Spring Rolls look great but the beer would not pass German standards anymore with this lack of foam when finished with cooking.

    Used to get a "king size" spring roll in the Indonesian restaurants in Holland called "Loompia?" are they basically the same ?

    Was thinking the same thing... deep fried food? healthy?

    Still they taste good so fock it... i'll just have to buy a bigger belt to hold up my XXLs.

    Mrs sabs spring rolls

    Well, no need for a seperate thread- heres the wifes version of spring rolls. She used to work at a Vietnamese restaurant in Ubon as a student, so she's a bit of a dab hand at making them. Today, a friend of hers came round to get some lessons too.

    You can always buy frozen, but Mrs reckons spring roll pastry is better fresh- so a quick trip to the Nongprue markets is in order.






    Todays ingredients:-



    Bean sprouts on the left, then Chinese cabbage and some spring onions in with it too, Mushrooms, half a kg of minced pork and glass noodles. Three eggs are scrambled and mixed in too, and the herby bits there are ground pepper mixed with salt in the small tupperware container, and cumin seeds behind. Thats the lot.

    Other things that go well with spring rolls are julienned red cabbage or carrots, and of course prawn meat. You can also add some soy and sesame oil. Now time to get all messy:-
