    Wayne Kerr’s Curry Crab and Shrimp

    Mrs. Kerr has conned me into cooking more Thai food this year. The old dear is busy setting up her new restaurant and craves home cooked Thai after a hard day at the office. I’m more interested in cold beer than food these days, so don’t mind knocking up a bit of Thai, as long as it has seafood in it. This is my curry crab and shrimp recipe.

    Thai Crab and Shrimp Curry - Ingredients

    Here’s all you need, less the beer. Crab, shrimp, couple of eggs, basic sauces, and a few herbs and spices. Hope you can work out what each of the ingredients are. If not, you’re probably better off finding a long haired assistant anyway.


    ^ All the ingredients I had at the time. Guess you could add some oyster sauce too for taste.

    Thai Crab and Shrimp Curry – Preparation

    Getting stuff in order is dead easy. I like to boil the crab first if you’re using mud crab. Blue crab you can just break up uncooked. Some tips here (Wayne Kerr’s Chilli Crab) on how to buy and boil the mud crabs. Slice up the long green chillies, smash the red chilli and garlic up together, and stir the raw egg up in a bowl.

    Thai Crab and Shrimp Curry – Cooking

    Cooking all this took no longer than 4 minutes. Supposed to be cooked fast on high heat. Just a few simple steps and you’ll be there.


    ^ Gently fry the red chilli and garlic, then add a dash of water and a bit of yellow curry powder


    ^ Throw the shrimp for about 30 seconds


    ^ Then the crab


    ^ Then the herbs and spices


    ^ The get the fry pan bloody hot and pour in the egg


    ^ Stir it around for about 1 minute to cook the egg and then put in/on something to serve

    This was enough for four of us with rice. Total cost 280 baht.




    ^ Best served with cold beer

    Overall a simple and delicious dish that should about 20 odd minutes to knock up if you've got the ingredients on hand.

    Graham Kerr always had to have a lot of wine, funny bastard he was, but come to find out, he drank the wine, bout a gallon on every show,, Poor bastard ended up in AA and ain't had a drink in years.

    Is it ok to substitute frozen crab meat so you don't have to fuck about with the shells?

    As soon as dear old Mrs. Kerr gets her ducks in a row old chap. I believe she spent all of today watching the tennis. At least she's not wasting time .

    She's looking at a place here in Ratchada, but I've been doing my best to convince her to look closer out around the boondocks. With the cheaper rents out there, reckon people would have more to spend on food (bladdy genius I am)
