    Crispy Bacon

    Finally found a way to make crispy bacon consistently. To eliminate the stink in the house, I put a cast iron frying pan on the gas barbecue outside and let it get hot. I then cook the entire package of bacon to render most of the fat out. I don't drain the frying pan at all during the cook. I let the cooked bacon sit on paper towels as I finish up the whole package.

    I then remove the frying pan and finish cooking the bacon directly on the grill, flipping often and letting a few black spots develop. Results in epic crispy bacon with minimum grease. The bacon stores well for a few days in the fridge as well to add to omelets, etc.

    Bacon craving for today complete....

    You know what is a great and easy dish to make with crispy bacon, spaghetti, mushrooms, crispy bacon, some basil, pepper, drizzle of olive oil and a lot of parmesan

    That sounds great! We have 4 Thai basil plants that need a good prune in the garden so this is on!

    Topper wrote once that he put basil on his BLTs instead of lettuce. I tried it myself. A crispy bacon, basil, and tomato sandwich is fine.

    I had a gf from Glasgow back in the day that would cook bacon until it was so black you could use it to do your homework.

    Pink and chewy back bacon all the way.

    And never waste the fat.

    This obsession with crispy streaky bacon is very much a Septic thing, we in more civilised countries ensure back bacon retains texture and the flavour of semi rendered fat.

    But, carbonising processed bacon to the degree described herein is not wise over a prolonged period given research suggests such a cooking method increases carcinogenic properties.

    The best way to obtain crispy bacon without frying is to place it in a microwave covered by kitchen paper and heat it for three minutes at a high power setting. Different processes curing bacon lead to differing water content, and fat content is very much a variable. If the bacon is still flaccid drain the plate of the water/ melted fat and covering with fresh paper give the strips another burst for a minute at a time until the bacon strips are dehydrated to your whim/ taste. Best not to overload the plate and stick to three strip batches.

    Frankly, such a process is a criminal way to treat free range, dry cured bacon with a half inch frill of succulent fat conferring its juicy flavour but then, septics have poor taste, as a rule.
