    PAG's Fish Tacos

    Never made tacos before, and though it's Friday and not Tuesday, thought I'd give it a go.

    First up was getting the fish into a marinade. The actual fish is Tilapia, which is normally quite bland so would benefit from the spicy marinade. The marinade is a mixed of chilli powder, ground cumin, cayenne pepper and paprika, olive oil and freshly squeezed lime juice.





    Next I made some coleslaw with shredded red cabbage, corn, some honey, chopped jalapeno pepper, fresh lime juice, fresh coriander, and some mayonaisse I made yesterday.





    Onto some guacamole.



    Pounded some chopped red onion and Thai chilli, along with some lime juice and coriander, before mixing in a bowl with avocado, more lime and some lemon juice, and some tomato flesh.



    Finished the prep by making some corn tortillas. Should really have used Masa Harina, the Mexican flour, but decided to with the regular corn flour I had in the cupboard.









    Tortillas made, time to cook the fish.



    Everything ready, with the fish broken up into flakes.



    Topped with some sour cream.

    A proper taco always needs some cilantro. A good effort though with lovely pics as always.

    Those tacos look excellent! Makes my mouth water to see them.

    I’m mostly impressed by your tortillia skills. Takes a lot of work to press those things out so flat without a press.

    Quite often (always?) authentic tacos are soft rather than crunchy.

    Did you worry about that much lime juice would turn the fish into ceviche?

    No, the lime juice helped form a paste of the other spices that coated the fish as a marinade. Ceviche of course is raw fish marinaded in citrus, and this was fried.

    Both soft and crispy are common. Depends on individual taste.

    Soft or crunchy, corn meal or flour are the choices. I loves me some hot, soft corn tortilla but finding masa in Thailand is impossible. I have been known to bring a couple of bags of masa with me from the USA.
