    Your chili sauce looks good, buck. My mom has some chili plants. She gets the fruits and marinates it in vinegar. Then adds that to any- and everything. As for me, I'm not big on spicy (I'm a lightweight, heh) so I just add a few grams of chili powder or cut up fresh chilies to put in soups/ sauces when I feel the need for some zing.

    My mom is Viet and has fairly high slice tolerance (higher than most Filipinos). When she visited Thailand, she ordered Tom Yum and said to make the spice level for Thais. She said it very good but super hot!!!

    In the Bicol region (SE portion of Luzon island), they sell chili ice cream with different spice levels. As a lightweight, I got only level 1 (the mildest). I had a colleague who ordered level 2. We could saw her face getting red as she ate the ice cream Probably for Thais, it would be level 4 or 5.

    ^ There is a place in Chiang Mai that sells green mango chili ice cream. Only one level of hot. HOT. I love the stuff.

    Hot ice-cream. a misnomer at beast LOL
    I am not big fan of ice cream but it sounds interesting , next time I am in CM , if I find the green mango with chilly ice-cream I will try it.
    Here in my region of Thailand (khon Kaen) which is in the north not too far from Laos , they but chilies in everything , I saw my wife having strawberries with a sugar , salt and chilies dipping powder. . And you are right , after awhile you get desensitized to it and it takes a lot more to get the same kick.
    Hot sauce wakes up the taste buds and makes hood taste better IMO .
    The sooner you fall behind, the more time you have to catch up.
