    The baking thread

    What with the price of shopping and in particular... Mr Kiplings cakes, I decided to go in the pantry pull out the mixer and dust the fudger down...

    Last week we made

    Fairy Cakes.


    Today whilst sat at home bored I've just knocked these out...





    Here's a little look in my baking cupboard whilst the rock cakes are rising and browning

    I believe as Dill will concur, that the pic was taken of a concave or was it convex surface which accentuated his width.

    However there was no escaping the Hilary Step of an abdomen.

    When alls said and done, how the fvvk can you call anyone a fat bastard on here.

    I've recently gotten more into baking, typically loaves of bread or rolls. A week or so ago, M'Sahib sent me a photo of 'hot cross buns' which for some reason appealed to her. I must have eaten them but not for many years, and certainly never made them.

    Quick 'Google', and of course they are traditionally eaten on Good Friday. Given that it's next week, decided to have a dummy run today.

    Gathered the makings. Bread flour, milk, castor sugar, cinnamon, all spice, salt, orange zest, raisins, egg, butter and yeast.



    Everything into the bowl of a stand mixer and kneaded for 5 minutes.



    Then on it's first 'prove' covered in the same bowl. Instead of using clingfilm, I use shower cap, much better for getting on and off.



    After one hour its doubled in size.



    Turned out onto a floured surface, deflated, shaped into a log and cut into 12 roughly equal pieces.



    Each piece shaped into a ball, and placed on a paper lined baking tray, then covered in oiled clingfilm and left for 2nd prove of 40 minutes.



    Piped the 'crosses' on the top of the buns. The 'crosses' are just a mix of flour and water, made into a paste.



    20 minutes or so in the oven, and they're done.



    Whilst still hot, glazed them with a mix of water and apricot jam.



    Turned out pretty good, and worth it for the smell of cinnamon coming from the oven along. I could only manage one of them right now, M'Sahib devoured two. Looks like they'll be made again next Friday.

    2 tablespoons of water, 1 of apricot jam (apricot because the syrup will be colourless, but any other jam could be used) in the microwave for 30 seconds and mixed. Got the shower cap tip from a Nigella Lawson video of her making my favourite sandwich bread loaf.

    Yeah well, wise move... who wants dusty fudge before packing?

    Despite some obvious issues here, I have been motivated to take a pic of my baking cupboard. A pack of rainbow fairy cake paper cups Reg... you don't see them very often.

    I fly to Hammerfest next week, of all places, and have promised the daughter a weekend of baking before I leave.

    Time to dust the convection oven down! Game on!

    There was a baking extravaganza in Korat today.

    I leave for work in a couple of days so started with making a few onion and bacon quiches for the freezer. I like to know the daughter has some decent food on offer when I'm away so she doesn't get fed packet instant noodles three times a week.

    The very first egg was a double yolker... a good omen for how things would turn out.



    I blind baked the pastry but managed without those weird 'ceramic baked beans' that some people seem to use. There was a bit of left over pastry which I used to bake a ham and cheese bake.



    And then on to the main event of the day... vanilla cup cakes.



    A couple of highlights... adding the concentrated vanilla essence.



    And adding the baking powder to make them rise.



    And rise they did... in fact one of the best rises I've had for some time.



    And that gap between the two mini-quiches... a ham and cheese bake for lunch! Well, half of one, anyway.



    Thanks for the inspiration Reg! I see some unkind comments elsewhere on the forum but no hard feelings. I dedicate the results of today's baking to you!

    A korker in Korat! Well done to team Mendip, I might step back from the 'fairy cake' recipe, but the quiche will be savoured.

    ^ Thank you PAG, it's always nice to get praise from someone who knows what they're doing! We're having quiche tonight and I may even post a pic up on the Dinner thread if it looks any good.

    Today it was Easter chocolate chip cookies. I think that the daughter is taking advantage of my good nature.

    Nothing special before baking...



    But things of beauty after 12 minutes at 175 degrees C.

    A productive day in PAG's bakery. Needed to replenish some bread rolls. Typically I made a batch of 12 as dinner rolls, this time same volume of dough but into 8 for burger type buns. Also made my favourite sandwich bread loaf.



    For the loaf, after the first prove in a bowl, flattened, rolled up and into the tin for the second prove.



    After an hour, she's ready for the oven.



    45 minutes in the oven, and ready to be cooled before slicing.

    We have same baking tins, your cooling rack looks far sturdier and superior, proper job well done
