Took delivery of my new kitchen appliance today!

Apparently slow cooking is the new air frying.

Looking forward to christening this beauty in Hell kitchen.

What recipe shall I concoct first to kick off this thread???

Slow-cooker...how very 1980's.

I used to love a pork casserole cooked with apples and cider done in a slow cooker.

It's safer and cheaper for a start.
Plus it's back in fashion, everyone and their dog in the know is on the slow cook gravy train at the moment.

Not a bad idea, I might substitute apples for the cider though.

If you like Moose yule love Mousaka, It's a ancient Grocko-Romaine dish developed for Spartan thymes

Line your crackpot with Streaky Bacon

Layers of Dauphinois style pre par boiled Murphy's potatoes in large biscuit thick discs Wagon Wheel size Ideal

Then add layers of traditionally minted shredded lamb or equally tasty glazed shallots/garlic onions or courgettes to taste

Layer of a rich but thin cheese sauce, I add Oregano cracked black pepper , some like sea salt, anchovy wasabi or Worcester, I prefer to taste teh finished rich dish which for me needs no garnish

You can Use jet GorgonZola or similar stinky biue Cheshire Cheddar or a nice willing Carefully will do

Then a layer of Eggplant or Aubergine/Brinjal if you will (Leave in Slices in salt water overnight will blanche or short steamy session you know 5m)

Then similar layers until the top where a scum will form over 8 hours

Sprinkle an extra Cheshire virgin oil if to hand cheese to finish maybe flashed under your grill or tool to brown

A slow cooker was the first kitchen appliance I bought when I moved to Thailand some 20 years ago.

I have used it at least weekly since then - soups, stews, curries. chili.

I have a soup on the go as I type this. It will be ready when I get up in the morning and the kitchen will smell good

I run mine off an extension chord in the living room and find that it makes an excellent hot pot. Heat a broth as hot and spicy as you like and then let folks enjoy dropping in their shrimp, baby bok choi and what have you. It can contribute to a lovely shared occassion. Bon Appetit!

A note on thickening of stews and stuff, Joe. (I noticed a comment recently in another thread but didn't I comment on it there)

Once your stew is cooked, put a tea-spoon of corn-flour into a small bowl and add a bit of water to it then mix them together. Once mixed, add it to the stew and it will thicken up nicely. Quick and easy.

After some liquid refreshment and inspiration, I've decided to rip up the slow cook recipe rule book !

I am not only ripping it up, I'm going to lay a steaming log upon its shredded fragments!

In my moments of clarity, pure genius is released from the crackpot haze.

Tonight I present to you "Chittys Fusion East meets West Beef in Black bean sauce with Jamaican Sweet potato"

A step by step guide so you can recreate this culinary experiment and experience.

Fist the beef brown, chop and delicately place open a bed of cherry tomatoes..

Layer upon layer of vision and goodness!
Next up the onion , garlic and sweet potato..

Then we add the sloppy black bean sauce and beef stock..

Bang on high for an hour then stir the pot.

Leave on low overnight and pray that Hells Kitchen doesn't explode in the wee small hours.

Right then,oops what about dinner tonight...

Its akin to conquering Everest for the first time or walking on the moon!!
One day a decent meal will emerge from my kitchen!!
